Les petits délices des fêtes de fin d'année arrivent dans les chaumières et donc sur les blogs !
Et s'il y a une chose que j'apprécie particulièrement ceux sont tous ces jolis biscuits...
Les Bredele, comme appelés en Alsace, et aujourd'hui, j'ai décidé de miser sur les Spritz, ou Sablés Viennois, ils sont délicieux et bien gourmands avec un bel enrobage au chocolat !
La recette originale est de Pierre Hermé...
Et reportée depuis le superbe blog Perle en Sucre
Sablés viennois ou Spritz - Bredele [★ Noël ★]
Recette initialement prévue pour 30 spritz mais j’en ai obtenu 14 donc c’est selon leur taille
190 g de beurre mou
75 g de sucre glace
2 pincées de fleur de sel
1/2 gousse de vanille ou 1/2 cuillère à café de poudre de vanille
30 g blanc d’œuf
225 g de farine
250 de chocolat noir ou au lait (facultatif)
Travaillez le beurre au batteur jusqu’à ce qu’il devienne bien crémeux
Ajoutez-y le sucre glace, la fleur de sel, la vanille et le blanc d’œuf et mélangez à nouveau au batteur jusqu’à ce que le mélange devienne homogène
Incorporez la farine et dès lors que celle-ci est bien incorporée, cessez de travailler la pâte
Préchauffez le four à 180°C
Transvasez la pâte dans une poche à douille munie d’une douille cannelé
Dressez vos sablés en « W » sur une plaque recouverte de papier cuisson en veillant à bien les espacer
Enfournez pour 12 à 15 minutes
Laissez refroidir sur une grille
Faites fondre le chocolat au bain marie et trempez-y la moitié de vos biscuits
Posez-les sur une plaque munie d’une feuille de papier sulfurisé et laissez prendre à température ambiante
Attention
* La pâte étant assez compacte vous remarquerez qu’il est difficile de dresser les sablés, cependant avec une douille suffisamment large (aux alentours de 13 mm), l’opération devrait s’avérer moins compliquée* Ces sablés peuvent se conserver une petite semaine dans une boite hermétique
